Prebaked Focaccia Pizza

Sometimes life gives you small wins. A loaf of focaccia is on sale at the grocery store. That same day, you happen to have leftover pasta sauce and all of the fixings in your fridge for pizza.

Ingredients List

  • 1 Prebaked Focaccia (if frozen, thaw for at least 1 hour at room temp)
  • 1/4-1/2 c Leftover Pasta Sauce
  • 1/2 c Mozzarella
  • 15 Pepperoni Slices
  • 2 Hot Italian Sausage Links
  • pinch Dried Parsley (rub between palms)

Instructions

  1. Preheat oven to 375° F.
  2. Cut sausage links in half. Remove casing. Cook on medium heat until cooked through (165° F), breaking into nice chunks, about 1/2-1″ pieces. I cooked mine a little extra for a nice browning.
  3. Fold parchment paper to fit on a baking sheet and place it. Put thawed focaccia over the parchment paper.
  4. Spread sauce over focaccia.
  5. Sprinkle mozzarella over sauce. Top with pepperoni slices.
  6. Sprinkle more mozzarella over pepperoni. Top with sausage links.
  7. Take any mozzarella that fell off the sides and put over the sausage.
  8. Rub dried parsley between hands and allow it to fall onto the pizza.
  9. Bake for 7-10 minutes, until the cheese fully melts.
  10. Enjoy!

Notes

  • Feel free to top with your favorite pizza toppings! With the density of focaccia, I recommend flavors that pack a punch.
